Princess was born from the need dictated by the market to break down the alcohol content of wine: the consumer trend is towards wines with low alcohol content, and consequently the cellars had to comply with the request by means of special tools and processes.

The wine dealcoholization is obtained through the osmosis, and it is studying this process and after several careful experiments that comes Princess' "formula" to get the final product. 

Until 2012 Princess got a product with 1.2% alcohol content which, although already an achievement potentially appealable as "non-alcoholic", did not reflect the project of the company. Finally, in 2013, Princess got the final goal: a product derived from wine with 0.0% alcohol content.
